Today I will be making spicy plantain.
Green raw banana.
Plantain are used for cooking.
They do not have the sweetness as regular banana
and they are not very soft.
Spicy plantain makes a delicious side dish.
I like to serve this with dal and rice.
This recipe will serve 4.
For spicy plantain we need:
I use 2 plantain.
You can buy them in Indian grocery store or Asian grocery stores.
So I have already boiled them in pressure cooker
using 3 cups of water.
After pressure cooker start steaming,
I boiled it 10 more minutes.
After boiling that's how it looks.
It doesn't become very mushy or soft.
So that made 2 cups plantain.
Boiled, peeled and sliced.
To cook spicy plantain, we need:
4 tablespoons of oil
1/8 teaspoon fenugreek seeds (methi)
1/2 teaspoon of cumin seeds (jeera)
2 tablespoons of coriander powder (dhania)
1/4 teaspoon of turmeric (haldi)
1/2 teaspoon of red chilli powder
1 teaspoon finely shredded ginger
1.25 teaspoons salt
2 green chillies, seeded and cut lengthwise.
About 2 tablespoon finely chopped cilantro (hara dhania)
And 1/2 teaspoon mango powder (amchoor)
First I will make the spice paste.
Mixing the four spices together.
So corainder powder.
Ginger
Red chilli powder
And turmeric.
And I will use about 1/4 cup of water.
And mix it together.
And just set aside.
I am ready to make spicy plantain.
Heat is on, medium high.
First I will add the oil.
Oil should be moderately hot.
So let's check if oil is ready.
When I put the cumin seeds
they should splatter right away.
I think I need to wait just another half a minute.
Cumin seeds
Fenugreek seeds
And spicy paste.
And green chillies.
Stir fry this for about 30 seconds.
And you will see, spices have started leaving the oil.
So spices have cooked.
And lower the heat to now medium.
And put the bananas.
And mix it well.
So all the plantain should be coated with spices.
And now I am going to sprinkle the salt.
Mix it well.
You have to stir fry this for about 5-6 minutes,
over medium heat.
So this has been about 1 minute.
So while you are stirring just keep breaking them.
It is different breaking them right now
than if you slice them small pieces in beginning.
It just gives a better texture.
This has been about 4 minutes.
So I will add just little bit water.
So I have used 1/4 cup of water.
Spicy plantain is ready.
So turn off the heat.
And now we are going to sprinkle the mango powder.
And cilantro.
And just mix it.
Cilantro adds a nice color and flavor.
And spicy plantain is ready to serve.
Spicy plantain is very flavorful and delicious.
Today I will be serving this with mixed dal, rice and roti.
